When planning a freeze-drying facility, the initial focus is always on equipment, energy, and raw materials. But once production begins, a quieter expense takes over: labor. A processing line that needs constant human attention drains a budget faster than most people expect. The real question isn't whether labor will cost money — it's how many people your machine will actually need.

Where Does the Labor Actually Go?

Freeze-drying itself is an automated process. Once the door closes and the cycle begins, there is nothing for a worker to do except monitor the system. The labor on a freeze-drying line is concentrated at the edges — the pretreatment area before the machine, and the packaging area after it. Fruit must be washed, sliced, arranged on trays.
